Monsieur Hervé’s Creations
Working with a watchmaker’s precision, chef Matthieu Hervé plays with textures and temperatures in the same way that a musician plays with notes. Having gained his experience and knowledge from the best chefs in the world, Normandy-born Matthieu Hervé has an affinity for fish and seafood but is just as inspired by his local surroundings. May we propose a spicy Alpilles lamb with smoked aubergine puree and courgette gnocchi? Or lobster with crispy veal head, asparagus, Ossetra caviar and a creamy lobster soup?
Sunshine, warm weather, fertile soils – France is home to the perfect terroir for exceptional wines. For this reason, our wine list features only French wines with a focus on small, local wineries from the South of France whose owners we know personally. We invite you to peruse our wine list and speak to our sommelier to discover some of the insider tips and little-known gems that we have assembled.
